When you think of Saint Patrick’s Day what are the first things that come to mind? Perhaps parades, debauchery, pots of gold, and of course: green beer. But who first thought of using food coloring to make light colored beer green? It seems to have taken off in Boston or New York. A 1914 newspaper article details a New York social club serving green beer at a St. Patrick’s Day dinner. A man named Dr. Curtin was credited with coming up with the green libation, noting he added a drop of “wash blue” dye into a certain quantity of beer to achieve the color. By the 1950s it had caught on all over the country, and Miami University in Ohio added the tradition of Green Beer Day in 1952.
